The Salsify Mammoth: Variety bi-annual cultivated for its root of 20 cm in length of color yellowish, flesh of sweetened soft flavors like oysters and of white color. Used cooked in various manner: in ragout, with a sauce bechamel or in salads. The young leaves are consumed also raw in salad. Very easy to cultivate.

Sowing instructions: To sow clearly in place from Mars to July, cover seeds slightly tamp with the back of the rake. Maintain soil humid until lifting of the seeds which can be rather capricious, clear out all 10 cm in line. Remove weeds regularly. You can make sowings in February in shelter or in open ground in the areas favourable. In winter protect the plants with straw and harvest according to your needs.
