The Caper is a long-lived shrub, caper indicates the flower part of the plant. Caper buds are especially used in southern countries as spice in their dishes, the smallest fruits are in general the most desirable. This variety is the Inermis type (from Latin Inermis = Thornless). Capers have a very intensive fragrance and delicate flavor. Used in mayonnaise, salads or sauces, it is also used in the famous french tapenade. Preserved pickeled in vinegar or brine. Buds have to be harvested before the flowering time begins, its a choice, flower or caper.
